ok what em I missing here ?????
Have categories set up under the top page...
In each of those I have sub-cat's
In those sub-cat's i have my products entered....
But nothing appears when viewed ????

Also is there anyway to add provinces to the menu when new users sign up ???

Have you ticked show on site for your category ?
Poke around Admin/Products and look for settings relating to show, hide, active ...... those sorts of settings
 
Provinces can be added under Site Users somewhere. I think it's under predefined fields tab
 
Give that a go and see how you go
