How do I totally disable the credit card payment option? My website is for South Africans and I'd prefere if I could just ad details for them to pay us into our account. How do I do that?

To organize thing as you have described please disable all payment systems except Personal.
Than go to 'Edit Payment System' link right to it and change setting 'Payment URL' to order_confirmation.php instead of credit_card_info.php
 
After these changes the process of checkout must correspond to your need.
