I'm in the process to buy a licence, but I would like to know if is it possible to implement a payment gateway different from the offered?

If you want to use a payment gateway which is not available in ViArt yet, you can send us the relevant documentation from the gateway provider, and we will estimate the cost of integration. Usually it is 100-300 USD. Please contact our Support centre if you are interested.

Is there any manual or something available through which I could integrate a new payment method in my Viart? Or do one necessarily has to go through Viart support team for a new gateway development?

There is no "payment method" manual. Which gateway are you thinking of using?
 
Its possible someone else here has already used it or the protocols are similar to existing gateways which can be modified to suit, before involving support.
