I don't know about moving - I guess I would go to the product's current category to display the product and then select 'categories' and change the selection.

There is an available link below each product 'Categories'. You can click it to assign your product to various categories.

Is it possible to do a "mass move" of tens or dozens of products from one category to another?

Sadly I think not.

It's fastest to do it in the database file...
 
I export the products to a CSV file (go to the admin products section, click "export", save it as a backup, edit a copy of the file in a spreadsheet program (I use OpenOffice.org, but you can also use MS Excel), then import them back in. I've had to do a lot of mass changes to products and items and this has been the most efficient way by far..
