Is there any way that when an order is placed it emails a copy of the invoice to a specific email address?

You can use Administration > Orders > Order Profile Settings to send notifications when order is crated. There are numerous of tags available to be inserted in the letter's body to indicate the details of the order.
Also pay attention to Payment Details Page and Final Checkout Page setting for selected payment system at Administration > Orders > Payment Systems.
