I have the same model. It comes in 2 different colours and six sizes.
 
I need to be able to control the stock numbers for each colour in each size. Is there any way to do this without making the colour options into 2 products instead of options?
 
Example, I have grey and black... In black, (size 1) I have a stock of 5, in grey (size 1) I have stock of 11... Is there any way to reflect this in the admin without creating two products?

Nothing to do with the software, just a general suggestion.
 
If you have limited quantities, you want each color/size to be a different product and make them related. IMHO nothing is worse than dissapointing a paying customer and having to provide a lame excuse about inventory counts.

The above was just an example, in some options there are hundreds of items...

This has nothing to do with software. When dealing with finite inventory, you must protect your businesses reputation.
 
Whether you have three or ten thousand items does not matter. If you ignore inventory control you will regret it. You can cleverly group products in such a way that the customer does not realize the inventory situation. An alternative would be a real time option list with inventory tracking. I do not believe that Viart offers anything like this at this time. This is not that complicated and we had it implemented in an older and now defunct cart. Not knowing much about PHP/MySQL it may not be an expensive modification. Perhaps you should request a quote.

In this case we consider of adding some kind of dependent options functionality. When you have some parent option, like: Color and two values Red and Blue, for example, you will be able to specify different values for other option, like: Size or create separate option for each color. For example, you can create Size option for Red color with values Small, Medium and appropriate stock level quantities and some other Size option for Blue color with different values, like: Medium and Large.
 
These are just ideas of how we want to improve our options functionality in future. At present, we can recommend you to create a separate product for each color to have the full control over your products invetory, like:
 
T-Shirt Red (Size: Small, Medium)
T-Shirt Blue (Size: Medium, Large)

In the admin, once you have added a product, find the product title and underneath you will see a number of options. Click on options and components. You will then be presented with the options page where you can insert a new option which in your case might be called 'size'.
 
You can choose a dropdown list or radio buttons etc for your customer to select. Again on that page, input the sizes as options. Those options will then be displayed next to your product.
