Does anyone know how to edit the 'price' text in order to make it say 'list price?'
 
Also, is there any way to add another line so that besides for 'list price' and 'our price,' there could be a 'sale price?'

You change these things in:
 
Administration > Messages
select cart_messages
and scroll down to PRICES
 
Hope this does what you want.

Also KNT, you can have 3 prices, such that the first is your original price; followed below by the actual prcie and below that is the difference between the above 2 which says yOu Save $xxxx (x%).
 
This only shows if you have a base price for the product indicated, and also a discount to be applied to that product.
 
As to changing the text i too would be interested and will check ut what Chris has suggested
