Yes, it's possible. You can look at payment system named 'Personal' in common installation of ViArt Shop.

I tried the 'personal' option in payment systems. It still wants credit card information via the 'payment URL' creditcardinfo.php. I would put something else there such as a message, but not sure what to keep and what to edit out of a copy of creditcardinfo.php.
 
Is there an easier way I'm missing? Customer paid outside website, so I'm just wanting to enter his order.

If you don't need collect credit card information from user you can set 'Payment URL' to 'order_confirmation.php' and specify all your notes in the 'Payment Information' field.

I've got a variation on that. For certain products in our client store we wouldn't want the full payment process, only as described below with fields for additional notes. Those products will also not have prices. It's for trade and each order is uniqe, thus quoted upon by the client.
 
Is it possible to have certain categories of products not showing prices on the product and category listing pages? Secondly, is it possible to force a different payment method for those trade categories?

At present, you can have multiple different payment systems but there is no possibiltiy to restrict them by product or category types.
But you can add some rules directly to the order_info.php where the payment methods are processed.
