Setting up a new site. Is there a way to move specific items to a different category?

This is after the initial import.

There is a 'Categories' link under each product in the Products section of the Admin area. Click it and assign a category you like.
 
Otherwise, you can do it via CSV export-Import changing the category ID in the .csv spreadsheet.
