Has anyone been able to create their own pages which allows then to use the relevant php file and blocks kind of like my own product listing or details page?

We recommend to modify existing block's files (php and html) so it will look as you wish.
 
Nevertheless you can investigate how the blocks are made. A good starting point will be to look at the code of some small block like Search or Languages.

I've been trying to find a way to use some CSS menus in a block or page so my customers can easily navigate to see what products they need. My product is complex and not easy to understand, and my customers are generally confused. So, navigating tabs with their bike and helmet style listed would make it easy for them.
 
I don't want to leave the main page for them to do this, but as far as I can tell, it's simply not possible to put in a page like this.
